Avocado and Blue Cheese…

Avocado and Blue Cheese Sauce Burgers

 

Preparation: 20 minutes
Cooking: +-20 minutes
Ready in: +- 40 minutes
Variations: Substitute minced beef with ready-made burger patties
Servings: 2 to 4
Tips: For a smoky, flame-grilled flavour, grill the burger patties over an open fire. Lightly toast the inside of the rolls to prevent the bread from getting soggy.

 

INGREDIENTS
750g minced beef (non-lean)
1 small red onion, finely chopped
2 garlic cloves, crushed
1/4 tsp cayenne pepper
1 egg
Salt and freshly ground black pepper
Olive oil, for cooking
4 fresh round bread rolls

 

Toppings:
1 avocado, thickly sliced
1 punnet fresh rocket leaves
1/2 red onion, sliced into rings

 

Blue Cheese Sauce:
50g butter
5 Tbsp all-purpose flour
1 1/4 cups milk
100g blue cheese
1 tsp lemon juice
Salt and freshly ground black pepper

METHOD
1. Using your hands, combine the minced beef with the diced red onion, garlic, cayenne pepper and egg and generously season with salt and pepper.

2. Divide the mince into 4 parts and roll each piece into a ball, then form into flat patties roughly 10cm wide and about 2cm thick.

3. To help firm up the patties, drizzle with olive oil, put them on a plate, cover and place in the fridge until needed.

4. To make the blue cheese sauce, melt the butter in a small saucepan on a medium heat and whisk in the flour to form a paste.

5. Pour the milk in a little at a time, whisking slowly and only adding more milk once the sauce has thickened. Keep adding milk until the roux (butter and milk paste) becomes smooth, creamy and is a good consistency, i.e. not runny or too thick.

6. Crumble in the blue cheese and whilst it is melting add the lemon juice and season with salt and pepper. Whisk well.

7. Reduce the heat and simmer on low for 5 minutes to cook out the flour. Add more milk if the sauce is too thick at this point.

8. In the meanwhile, heat a griddle pan on a medium-high heat, brush the burger patties with oil and cook for 3 or 4 minutes on each side or to your liking. Use a spatula to lightly press down on them, making sure each burger is in full contact with the pan.

9. Build your burger by topping it with rocket leaves, avocado, red onion and a couple spoonfuls of the creamy blue cheese sauce. If you’re feeling especially hungry, serve the burgers with chips.
