Teriyaki Cheese Burger with Piña Colada Sauce

Teriyaki Cheese Burger with Piña Colada Sauce

Tips: For a smoky, flame-grilled flavour, grill the burger patties over an open fire. Lightly toast the inside of the rolls to prevent the bread from getting soggy.



750g minced beef (non-lean)

Sesame seed oil

4 fresh hamburger rolls, sliced


Teriyaki sauce:

1/3 cup soya sauce

1/2 cup water

3 Tbsp Mirin

2 Tbsp sugar

2 garlic cloves, crushed

2cm piece fresh ginger, thinly sliced

1/2 onion, peeled and left whole

1 Tbsp cornflour (Maizena)

Freshly ground black pepper


Piña colada sauce:

2/3 cup tinned crushed pineapple

1/3 cup coconut cream

2 Tbsp sour cream

Squeeze of lime juice




1 pineapple, peeled and sliced into rings

200g gouda cheese, grated

1/2 red onion, sliced



1. Heat a small saucepan to a medium-high heat, add all the teriyaki sauce ingredients except for the cornflour and bring to the boil.

2. Mix the cornflour with a 1/4 cup of water, stir the mixture into the sauce and simmer for 5 to 10 minutes or until thickened.

3. Finish the teriyaki sauce by removing the onion and ginger slices and season with freshly ground black pepper. Place in the refrigerator to cool.

4. To make the piña colada sauce, combine the crushed pineapple, coconut cream and sour cream in a small saucepan and simmer over a low heat for 5 minutes. Remove from the heat, stir in the lime juice and season with salt.

5. Using your hands, combine the minced beef with the teriyaki sauce.

6. Divide the mince into 4 parts and roll each piece into a ball, then form into flat patties roughly 10cm wide and about 2cm thick.

7. To help firm up the patties, put them on a plate separating each patty with wax paper, cover and place in the refrigerator until needed.

8. Grill the pineapple rings in a griddle pan on a medium-high heat for 2 to 3 minutes on each side until nicely caramelised.

9. Brush the burger patties with sesame seed oil and using the same griddle pan as the pineapple rings, cook on a medium-high heat for 3 or 4 minutes on each side or to your liking. Use a spatula to lightly press down on the patties, making sure each burger is in full contact with the pan.

10. Build the burgers by topping the rolls with piña colada sauce, the juicy teriyaki beef patties, grated gouda cheese, grilled pineapple rings and red onion slices.
